Sea buckthorn chunks

These little juicy sea buckthorn bites are so easy to make. They taste great with both coffee and tea and tempt most people with their beautiful colour. Crisp bottom and juicy top.

Sea buckthorn cake

You will need the following:

Bottom:

  • 170 g soft butter
  • 65 g of sugar
  • 170 g flour

Filling:

We always use gluten-free flour, but either will work.

Here's how you do it:

Bottom:

  1. Beat the butter and sugar together well.
  2. Add flour and bring the dough together.
  3. Press the dough into a greased baking tin (approx. 20x30 cm)
  4. Put it in the fridge for approx. 30 minutes
  5. Bake the base at 175 degrees for approx. 15 minutes.
  6. Let it cool a little.

Filling:

  1. Whisk all ingredients together.
  2. Pour the mixture over the pre-baked base.
  3. Bake the cake at 175 degrees for approx. 30 minutes until the filling is firm.
  4. Cool the cake completely.
  5. Cut the cake into small squares.
  6. Blend a tbsp. dried sea buckthorn flakes in a coffee grinder.
  7. Garnish with icing sugar and sea buckthorn flakes .
