Chocolate cake with sea buckthorn
You will need:
- 200g butter
- 175g of sugar
- 200g dark chocolate (70% good quality)
- 8 egg yolks
- 8 egg whites
- 50g sea buckthorn syrup
- sea buckthorn flakes
Here's how you do it:
Butter, sugar and chocolate are melted together over a water bath. Whip the whites until stiff. Stir the plums into the chocolate mixture when it has cooled slightly. Finally fold the whipped whites into the batter.
Put 2/3 of the dough into a greased spring form (approx. 25 cm) and bake at 175 degrees for approx. 25 minutes
Check with a baking pin whether it is fully baked. Let it cool in the tin, where it will collapse a little. That is the point.
When the cake is completely cold, poke holes in it and pour the syrup over it.
Finally, the remaining dough is added, after which it is smoothed out and refrigerated.
When the cake is completely cold, decorate it with sea buckthorn flakes .
